Scientific Study of Food is an introductory course in the science of food. Students will learn about meat and livestock selection, safe food preparation, and theories related to food composition and preparation to meet physical, psychological, and social needs.
Students will develop skills in a variety of food handling, food storage, and food safety concepts. Students will explore food chemistry principles, food safety, and sanitation methods, and Hazard Analysis Critical Control Point (HACCP) Systems. Through this course, students will have the opportunity to complete the American Meat Science Association Food Safety and Science Certification.
Students will evaluate live animals and carcasses of beef, sheep and swine. Students will discuss and learn about slaughter processes, meat inspection and anatomy of livestock.150
Through this course students will learn key skills in the meat fabrication and processing industry including food inspection and storage; cutting, deboning, and ground meat; and packaging techniques. Students will use tools, machines, and equipment common in a meat processing facility.
Students engage in supervised work experience in a meat science-related business or production operation with an emphasis on technical and employable skill development. Students employ academic knowledge in real-world applications. Students are immersed in the industry and network with leaders. Through the experience, students develop a skill set and resume for future employment in the industry.
